To obtain Voatsiperifery red peppercorns, the fruits are left to ripen longer than usual before being harvested. The result is a pepper with a rich and incomparable aroma.

Its woody, fruity aromas, with hints of citrus, make it an excellent candidate to enhance chocolate, strawberry, or pineapple based desserts. Mixed with other peppers, it is also delicious with red and wild meats.

Be careful, though, it becomes bitter when cooked too long.
